What is Pad Kra Pao?

Pad Kra Pao is one of Thailand’s most beloved dishes. Traditionally made with minced meat, garlic, chilli, and basil, we’re swapping out the meat for crumbled Simply Soy Tempeh to make it plant-based without losing any of the depth or spice.

Ingredients (Serves 2)

Tempeh Stir-Fry:

  • 250g Simply Soy Tempeh, crumbled

  • 5 garlic cloves

  • 2 bird’s eye chillies

  • 1 small shallot

  • Thai basil leaves

  • 2 tbsp oil

Sauce:

  • 1 tbsp soy sauce

  • 1 tbsp vegan oyster sauce

  • 1 tsp dark soy

  • 1 tsp coconut sugar

  • 2 tbsp water

To Serve: Jasmine rice, vegan fried egg (optional), lime

Instructions

1. Crumble and steam the tempeh (optional for milder flavour)
2. Make your sauce by mixing soy, oyster, dark soy, sugar, and water
3. Stir-fry garlic, chilli, shallot until fragrant
4. Add the tempeh and brown for 3–5 minutes
5. Pour in sauce and stir well
6. Add basil and cook just until wilted
7. Serve with rice and vegan fried egg (optional)
